My next stop on my food tour. I am a local Food blogger and lifestyle blogger from Tampa, FL. Every year I do 1 to 2 (unsponsored) Food Tours. There usually is a different them, this year being Young, Hungry, and Curious. Our next stop is Indigenous in Sarasota, FL. Chef Steve Phelps has been at Indigenous since 2011. It's a small & intimate restaurant located in a restored house in the historic district of Towles Court District.

So, I have been wanting to come to Indigenous for so many years, but I had to wait because the menu changes weekly and not every menu had something that both my husband and I wanted. I finally was interested in the menu that was available in June, but my dinner ended up being pushed back to July. Honestly, I probably would have ended up waiting again because I was unsure about this menu, but I figured I can't go wrong with a pork chop and boy was I right! I am really happy to be able to add Indigenous to my Young, Hungry, and Curious Food Tour for 2023.
So, the Lionfish crudo was just ok whereas my husband's mushroom bisque was quite delicious. It isn't gluten free so I couldn't have any, but you get a decent amount and it looked rich and creamy.
So, the Iberico Pork chop (shown below) obviously is what stood out and showed out during this dinner. It was literally perfection. I don't think I have ever had a pork chop that perfect that I didn't cook and when I did, I used my Sous Vide. Other than the maple brined Berkshire pork chop from Stirrups with their house sauce yes, this one slapped.
I feel like this one was also cooked using a Sous Vide also. So, not only was the cook perfect, but the sauces and the brocolini, bacon, and fingerling potato hash was full of flavor. My husband was like "wow, I wish I had ordered the pork chop now"!
Now, the restaurant is very cute. If you have been to St.Augustine and Charleston you will find restaurants in renovated homes and believe me when I say, they usually have the best food!

So, if you are interested in trying out Indigenous just remember 1. you need a reservation because they are usually busy and 2. the menu changes weekly. So if you want this pork chop don't wait because it may nott be available next week. My husband and I discussed what would be the perfect dinner based on what we had:
Mushroom bisque starter
Iberico Pork Chop main
Vanilla bean ice cream dessert.
You will not leave disappointed!
