HAMACHI CRUDO green tomato, avocado, pistachio, black garlic, pomelo.
This was gluten free without the black garlic and soy sauce and it was truly delicious, refreshing, and amazing. The green tomato had a very aromatic and flavorful essence that I have never picked up on before. To me it tasted like cologne and flowers much like how I feel when I get cocktails made with raw herbs and lavender. The hamachi crudo was dense and fresh with an oiliness that melted on the tongue; definitely some of the best that I have had. There were a lot of layers of flavors and textures and I loved it and I kept thinking wow this is amazing without the black garlic and soy sauce. I think I appreciated it so much more like this and I was so happy that they made it for me to be safe and gluten free.
I have literally been to restaurants where the Chef had refused to prepare a crudo gluten free for me when in reality these are all gluten free items, it is usually the oils, sauces, or garnishes that can contain gluten which can be omitted easily. As someone that is a Celiac (and I also have Diverticulitis) eating really clean seafood is really how I survive and get like that passion for food because I can not divulge a lot of times in fried foods, pastas, pizzas, and desserts which can be the real "eye candy" of food blogging.
After over 10 years being gluten free duet to Celiacs it is things like this that I love the most, other than amazing huge salads, sashimi, a great wagyu, Caviar, King Crab and oysters. I will admit that being a Celiac has actually changed my food pallet a lot because I was forced into trying a lot of new things when the things I grew up eating with breads, pastas, and even things I ventured out into cooking like couscous no longer were options for me.
This is a great dish and I would recommend it before it isn't on the menu anymore. Tres bien!
