FITNESS UPDATE:
So, this month I had to take a major step back. My tale bone has been hurting since last June. It triggers the sciatica that I have that I had under control for about the last 10 years and now it is raging. I think December was the month it was the worst! I have been in so much pain I can barely walk, can't sit, can't stand, can't lye down without pain! I realized after all these months, even though I was "resting" I wasn't resting. I wasn't giving myself enough time to heal which was why every month it was still flaring up. In case none of you have ever had tale bone injuries and pain, all you can do is wait for it to heal. There isn't anything that can be done about it. You can take Ibuprofen and other Anti-inflammatory pills and do work outs to target making the tale bone strong again. You can do massages, soaks, cold and hot compresses, but the ultimate thing is time.

I never stopped working out, I just changed to doing yoga to release talebone and sciatic pain. Different poses to strengthen the tale bone as well, but my lifestyle doesn't support low activity despite the fact that I am very sedentary at times.

Anyhow, so in January I went down to almost 0 work outs. I obviously didn't want to do this, but I get a lot of working out within my three story home as well as walking around outside. So, I had finally rebuilt a lot of lost muscle mass from when I got sick in 2021 then again in 2022. I was at a place where my physical strength and fitness was good for me. I knew taking a full month break I would loose some muscle mass.

I did. Not gonna lie, but you know what, as quickly as I loose it, it will come back because I always am moving around and I make sure to get my protien in. Ok, so I can say by the end of January I had thr least amount of talebone pain that I have had in six months. I truly needed to give my body time to heal and I will continue to do so. Having an injured talebone is no joke and it's pain that if you haven't had it you will not be able to understand until you do.

I had surgery on my talebone before for a different issue and I told my husband all these times to not sit outside on the stoop without a cusion because he could break his talebone and he would never listen. Then he did and he knew that pain for real. It's no joke and age does NOT MATTER, nor fitness level. You can fall and injured your talebone or bruise it and it will be a wrap.

The good thing is, I got my diet clean and I am ready to celebrate my birthday and February and praying I do not aggrivate it. I really have had my fill of the talebone issues forever.

Yoga in my life right now consists of more upper body asanas and talebone friendly lower body asanas. It is not easy to go this route because I go a lot harder than I can now and I am always worried that I will start stiffening up muscle wise. I feel like the last 4 years I have gotten ill a lot and I guess that's to be understood because like 2 of those times I had Covid like a lot of people did. All of that impacts my workouts so I am doing the best I can, but fitness does start in the kitchen so I hope you all Check out the food I cooked in January.

Some healthy January meals I cooked. 


A lot of these meals I always eat, but this is actually the first time I just did a whole documentation after getting glutened at the Livingroom in Wesley Chapel, I am still sick.


 Anti-inflammatory meals are how I get by as a Celiac.I honestly also needed a break from dining out also because I was healing.


So, because I was eating at home I lost about 7 pounds and some of that was because I was sick. 


Hubby lost about 14 pounds, his results varied because he was still eating outside meals for lunch until we started meal prepping for him at the last week of the month.

Gambas Ajillo








Breakfast

Turkey sausage patty with fried eggs and grits with Papa Grandana


1 lb ground turkey

  1 1/2 teaspoon seasoning salt or smoked salt 

1 1/2 teaspoon black pepper

 1/2 teaspoon garlic powder pinch of clove pinch of red pepper flakes pinch of cayenne

l 1 teaspoon sage 1/2 tablespoon of brown sugar

can use more 1/2 -1 teaspoon fennel seed

 1 teaspoon thyme 1 Tablespoon olive oil



3 ingredient Fetticini Alfredo

Butter
Parmesan Cheese
Pasta (and reserved pasta water)


This is the more authentic way to make Alfredo, this is how I usually make it, but I don't use as much butter or cheese as a lot of people use. I have seen people use an entire stick of butter and I can not bring myself to do that.

Also, I just want to note, I use gluten-free pasta and it does tend to absorb the sauce a lot (which I hate because it not only looks dry, but if you don't eat it fast it will get dry).

Chicken meatballs with gravy and yellow rice

Ingredients

  • 2 tbsp EVOO
  • 1 large white onion, finely chopped
  • 3 garlic cloves, minced
  • 1 1/2 tsp Trader Joe's onion seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt, plus more to taste
  • Freshly ground black pepper 
  • 1 lb ground chicken 
  • 1/4 cup fresh parsley, finely chopped, plus more for serving 
  • 1/4 cup panko breadcrumbs (gluten free brand from Fresh Market)
  • 3/4 cup Mahatma yellow rice or you can use turmeric to make white rice seasoned and yellow
  • 1 1/4 cups low-sodium chicken or vegetable broth
  • 1/2 tsp Badia Complete seasoning
  • A big handful baby spinach, roughly chopped 
  • save chicken bits and oil for gravy to serve over the meatballs
  •                     



METHOD

  1. Preheat the oven to 400° F and PREP the meatballs to go on a cast iron flat pan or baking sheet pan.
  2. Combine the chicken, the seasonings, some olive oil, the spinach (finely chopped) into a large mixing bowl and form the meatballs. I did not use a panko for this recipe.
  1. Use well-oiled hands to roll into 10-12 meatballs. Sear the meatballs off quickly in a cast iron pan on medium high heat and then place on the baking sheet and bake for 12-15 minutes or until no longer pink in the center. Temp check that the meatballs are at least 160 degrees internally.
  2. While the meatballs bake, finish cooking the rice. 
  3. Serve the rice and meatballs with a the chicken gravy. If you are using a gluten free flour to make the gravy you WILL need to add chicken broth and 1 teaspoon of Kerry Gold butter to thicken the gravy. Stir it with a whisk until it thickens.
