This has been an interesting month, like the rest this year, stressful. I have gained a lot of peace by practicing yoga.
MISSING THE CITY
With everything being shut down we have been having "date night" at home and enjoying home cooked meals. I enjoy cooking so much so it hasn't been a chore or anything different than usual. As a blogger a lot of my blog details restaurant visits. I decided to share two blog posts this month from date nights we had. I was inspired by current cravings. In South Tampa a lot of these restaurants are still open for curb-side pickup so the posts are still relevant.
I am quite interested in how the future of dining out will look in the future.

I post a lot of roasted chicken dishes...all of them have different seasonings and spices, I usually have to write it down so I can make it the same again.
Navy beans (one of my favorite white beans) jasmine rice wings Swiss chard |
Shrimp curry Jasmine rice |
Roasted wings Carrots rice Swiss chard |
Whole roasted chicken breast Jasmine rice Swiss chard |
Salmon Tri-colored quinoa feta finely chopped bell pepper dusted with Sumac |
Cook salmon 22 minutes at 410
salt (to taste)
pepper (to taste)
garlic powder (to taste)
evoo (1 cap full)
QUINOA
cook to package requirements
Add feta as garnish after its done and plated
Dust with sumac and add edible flowers
Cook on the side in pan finely chopped green& red bell peppers and onions then add to to quinoa.
Drizzle evoo on plate and plate
Mornings are especially fun because I always have a ton of energy and love to experiment with breakfast foods. We periodically buy these gluten free McMuffins from the frozen section at Whole Foods. They taste exactly the same as the real ones and they do not need to be thawed out beforehand.
