Hainanese chicken rice, Singapore Chicken and Rice
I like to challenge myself with cooking new and interesting recipes, and for years, I have wanted to make Hainanese Chicken Rice or Singapore Chicken and Rice. I finally made it, and it turned out so well! I had a great time making it. The full recipe will be on this months city life.
Chicken Ingredients:
1 whole chicken ~3 lb
Sea salt to taste (I used about 3 tablespoons
1 bunch green onions (separating the
whites from the greens)
3.5 quarts water
3 Tbsp Chicken bouillon powder
1 thumb of ginger peeled, but left whole.
6 cloves garlic peeled but, left whole.
1-2 Tbsp sesame oil
Rice Ingredients:
Fat trimmings of chicken
2 Tbsp minced garlic + ginger
2 cups rice
2 cups broth from chicken
Scallion ginger oil Ingredients:
*I messed up the sauce, but I made it this way and it turned out so great!
5 cloves of garlic
A thumb of ginger with salt and a little chicken broth.
Blend in you food processor and save to pour over your chicken and rice when finished.
Scallion ginger oil ingredients (the correct way):
Whites of the green onions
1 Tbsp minced garlic + ginger
1 tsp salt
1/4 cup neutral oil
1 Tbsp sesame oil
Chili sauce Ingredients:
2-3 Birds Eye chilis
1 Tbsp mincede garlic & ginger
1 tsp sriracha or sambal and prepare all
T tsp
1/4 tsp salt
1/4 tsp pepper
