This is something I grew up eating probably once a week. There was this awesome Cantonese restaurant in my hometown that had the most amazing food. I often miss this recipe so much I literally ache for it.

After I learned that I had Celiac Disease I pretty much had to give up Chinese food. I think at this time both my husband and I ate some form of Chinese food at least two times a week be it the local spots (you know those spots where the menu's are all on the wall half lit and faded) and we also loved chain restaurants like Panda Express and the Bourbon Chicken place at the mall food court.
Well, I had to give all of that up! 

P.F. Chang's was the first place that made an effort to have gluten free items on their menu and they had two of m favorites: Moo Goo Gai Pan and Beef & Peppers. Well, now neither of those are on the menu anymore sadly. So, I have to make it. While I excel at cooking almost everything I attempt to make, I know my Chinese food is pretty good, but it never hits the spot like the local places did. My husband swears its because I do not cook with MSG, he may be right.

So, I got this recipe online from someone who claims it is the closest to authentic and then I made all of my necessary adjustments to make it gluten free.

GLUTEN FREE CHICKEN KATSU WITH FRIED CABBAGE AND SUSHI RICE


This is his recipe so I do not have any instructions. It is so hearty, this is enough food for two people, but he serves this up as one serving. It tastes amazing! The only thing is that it does not reheat well because the chicken is battered and semi fried. Anytime I do not want to cook or don't feel well he makes this for me and it hits the spot!!! He adapted a recipe that he found and made it gluten free so we could both enjoy it. Now that is love!
