It took a while, but I'm back. I live for a lot, one of those things is the beach. I usually would be by the water every single day like outside my window and now I can't see it at all even though it's 5 minutes away. I traded my view for something quite cool which I haven't spoken about, but that little office I griped so much about when we first moved has a view of Riverwalk and Downtown. I also can see the moon from there and I can't from any other window in my house so I guess it was fate.
Anyway, it's been a long time but now I am.back. I wrote a put living the last year in fear and now I am putting my mental health more centered in my life because one can not stay cooped up in the house and I for one can't be without some water! The 2nd part of getting back out there was getting vaccinated! I had no side effects that I could identify and were continuous, meaning I had a few chills the first day, but I also kept very cold in my house so it could be that. Anyway, both hubs and I decided to go out for some safe dining outside for the first time in a long time!
FITNESS: So, to delve deeper into my weight-loss journey, I didn't decide to lose weight. I have spent the last 6 years only practicing yoga, pilates and a small amount of kettlebell lifting in hopes to build a "stronger body". Naturally, I am pretty lean and lanky and I always did a lot of cardio. I was shamed a lot because I had a petite frame. Even in my adult life I was interested to see how I would fare doing what I actually loved most 100% which is yoga and pilates and ditching the treadmill and long hot runs.
Anytime I got bloated or was gaining at all, I would just do cardio and my body would stabilize. Even with my strict diet, the contraceptives were stopping that despite the fact that I was working out and keeping my diet balanced and at the right calorie level I still gained after a few years. I had a long conversation about calories in versus calories out with my doctors before I went back on contraceptives about this, but honestly I am not sure I believe a lot of what they said now.
Pretty much in the few years I took them even with diet and exercise, I gained about a pound and a half a year. So after five years I was 140 pounds which was overweight, though not by much for my height. I liked how I looked, but my clothes were getting uncomfortable for one and I have a lot of clothes being a fashion blogger. Carrying around extra weight to that wasn't ideal for me even to fit the body standard that people were pushing online and in my life as a black woman.

Slow Cooker Chicken Adobo
INGREDIENTS
- 1.5 lbs chicken chicken wing sections, thighs, drumsticks or a mix.
- 1/4 cup gluten free soy sauce (Tamari).
- 1/4 cup vinegar apple cider or white vinegar.
- 2 teaspoons brown sugar more to taste (or use a few chopped dates!)
- 6 cloves garlic minced
- 1 teaspoon black pepper.
- 3 bay leaves.
- 1 medium onion cut into slivers.
INSTRUCTIONS
- Add all of the ingredients to the slow cooker and cook on low for six hours. Serve with rice or rice noodles in a large soup bowl.
Curried Baked Wings
Velveted Pork Stir Fry with Bok Choy
Roast Chicken Breast with Asparagus, corn, and brown rice.
- INGREDIENTS:
- 1 tablespoon olive oil
- 2 pounds boneless, skinless chicken thighs (about 6), cut into 2-inch pieces
- Coarse salt and ground pepper
- 1 can of corn or 2 fresh shucked corn ears
- 2 pounds asparagus, tough ends removed, cut into 2-inch lengths
- Cooked noodles or rice (optional)
DIRECTIONS:
Melt the butter with the olive oil in a skillet over medium-high; stir the parsley, basil, oregano, garlic, salt, lemon juice, and wine into the butter mixture. Add the chicken; cook and stir until the chicken is browned, about 3 minutes. Reduce heat to medium; cook, stirring occasionally, until the chicken is no longer pink inside, about 10 more minutes. Add the asparagus; cook and stir until the asparagus is bright green and just starting to become tender, about 3 minutes.

EVOO, Inuse Brightland
Cherry Tomatoes (a handfull) or Roma tomatoes seeded (2 tomatoes)
Spring mix salad
mint leaves
Lemon juice
Lemon zest
Persian Cucumbers or English cucumber (half)
*Optional Sliced red onions (a quarter of an onion)
