Oysters Rockefeller | with gluten free Panko Crumbs
- 12 medium oysters, since we had a lot of other food cooking we just did 4 total.
- 2 cups (or handfuls ) fresh baby spinach, this will cook way down to almost nothing FYI
- 2 ounces 1/3 less fat cream cheese, I like Philadelphia or you can use your own preferred cheese (in block form and shred with a cheese shredder).
- 1/2 a cup half & half cream
- 3 tablespoons grated mozzarella or Parmagiano Reggiano
- Gluten-free panko crumbs
- -Place the open oysters on a sheet pan, I prefer cast iron, try to use something that will keep the oysters upright so the toppings and oyster liquor stays in place.
-Cook the spinach in a small sauce pot, season it with a pinch of salt and pepper, 1/2 tablespoon of butter and mix until the spinach wilts down, about 2 minutes.
-Add the cream cheese, half & half and other preferred cheese to the mix. Cook on medium until until cream cheese is melted and resembles creamed spinach (about 3 minutes).
Heat the oven to 430 (depending on how hot your oven gets you can go up to 450 or broil).
-Place the spinach mixture on top of each oyster (as much as you can fit, it depends on the type of oysters you buy, I used Moondancers). Top each with 1/2 teaspoon panko bread crumbs.
-Cook 5 to 7 minutes or until golden brown and eat immediately.

Baked lobster with steamed broccoli and baked potato
- 8 oz lobster tail, 2 tails
- 3 tablespoons butter, melted
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon fresh parsley, chopped
- 1 teaspoon lemon juice
Preheat oven to 450
- In a small bowl, combine the butter, salt, pepper, garlic powder, paprika, lemon juice, and parsley, then brush the mixture evenly over the lobster meat.
- Place the tails onto a baking sheet, then bake for approximately 12-15 minutes, until the lobster is fully cooked but not rubbery.
Make a butter sauce to brush over the lobster before placing it in the oven
