Second

Oysters Rockefeller | with gluten free Panko Crumbs

  • 12 medium oysters, since we had a lot of other food cooking we just did 4 total.

  • 2 cups (or handfuls ) fresh baby spinach, this will cook way down to almost nothing FYI

  • 2 ounces 1/3 less fat cream cheeseI like Philadelphia or you can use your own preferred cheese (in block form and shred with a cheese shredder).

  • 1/2 a cup half & half cream

  • 3 tablespoons grated mozzarella or Parmagiano Reggiano

  •  Gluten-free panko crumbs

  • -Place the open oysters on a sheet pan, I prefer cast iron, try to use something that will keep the oysters upright so the toppings and oyster liquor stays in place.
-Cook the spinach in a small sauce pot, season it with a pinch of salt and pepper, 1/2 tablespoon of butter and mix until the spinach wilts down, about 2 minutes.

-Add the cream cheese, half & half and other preferred cheese to the mix. Cook on medium until until cream cheese is melted and resembles creamed spinach (about 3 minutes).

Heat the oven to 430 (depending on how hot your oven gets you can go up to 450 or broil).

-Place the spinach mixture on top of each oyster (as much as you can fit, it depends  on the type of oysters you buy, I used Moondancers). Top each with 1/2 teaspoon panko bread crumbs.

-Cook 5 to 7 minutes or until golden brown and eat immediately.
