May 2025 City Life: Living w/ Celiacs Disease & Other Autoimmune Diseases ... It is Celiacs Awareness Month






I stay in my lane with a salad and cocktail. If you have Celiacs, you know 😬😉🥰 and hubby gets the fun food more times than none.

May is Celiac Awareness month. I am about positive. I have been a Celiac most of my life, starting in high school when I started buying my own food. I wanted all things great, but my stomach wasn't having it. Now, it's been almost 15 years since I am gluten free, my whole kitchen at home remains gluten-free, and we have so many more options.

There is no cure for Celiac Disease, only abstaining from gluten, but I don't get to mad when hubs gets to chow down...I just live vicariously through him ❤️🥰.

Roast Beef Sandwhich.



Let me just say...my husband loves this! He loves roast beef and usually it is just him who eats it because I prefer ham and jerk turkey.

I surprised him with this Roast beef sandwich for dinner and he was floored. For us, sandwhich night is a big deal. I grew up having "sandwhich" night every Wednesday my dad would stop by Brocato's and bring home three huge sandwiches. It was like the highlight of my week. It also goes the same for Publix Subs which kind of replaced Brocato's for me once I moved even further away from the restaurant. 


Anyhow, sandwhich night is even more special now because I am gluten-free I can't get a quality sandwhich made anywhere without the risk of cross contamination.  Also, there are few places that even offer a gluten-free sub or Cuban Sandwhich. So, if I want it, I have to make it myself.

And my husband says I make the best sandwiches; maybe that is why. I don't even like roast beef like that, but this did slap.












Quick Homemade pho bowl
( the noodles are premade) 

This is not a traditional pho broth or anything like that. I make a quick broth at home from organic spices, veggies, oils, and broths.





What I had for lunch today. I love these containers of pho that Publix sales. These are obviously not as good as the real pho from a restaurant, but it is tasty and it's quick and easy. I find the vegetable flavor to be pretty good.

Add any ingredients you want.

Simple Air Fryer salmon with microgreens and a simple Chipoltle sauce.
