I have had a portable gluten tester from NIMA since the company started. For a while the company seemed to be out of business and finally NIMA Partners announced they had the technology and would be making more testers as well as an updated gluten tester that can be paired with the app (my old one never worked with the app) and it can test more than 20 parts per million of gluten. So, Trader Joe's used to sell these tator patties years ago and then they stopped. They came back again last year, but now everytime Ineat them I get sick *I think they contain gluten now). So here is how it can be tested.







Eating healthy for the New Year with Factor!


I decided to try salads with Factor, as you know I am a huge fan of big salads (my favorite being from Sweetgreen).

This year we smoked a whole chicken.














 GLUTEN FREE HOME COOKED MEALS 2026: 

This is the same clam bake just over pasta now with a white wine butter sauce on the noodles. I actually liked it this way better than eating it from the little ramekin .


Scallop Bake: very similar to the one at Olive Garden and mine is gluten-free. 


Patagonian bay scallops 
Kerry Gold Butter 
Clam juice
fresh parsley 
Gluten-free Panko 


Black pepper
Sea salt
evoo
shredded parmesan cheese 
paprika



METHOD: boil spaghetti noodles and place them in the baking dish.

Sprinkle parmesan cheese on the noodles.

Next,
in the baking dish combine a half a pound of Patagonian scallops, butter, clam broth (or chicken broth).

Add sea salt, black pepper, minced garlic.

Create Butter Mixture: In a small bowl, combine the melted butter, minced garlic, and lemon juice. Pour this mixture evenly over the scallops.

Prepare Topping: In a separate small bowl, mix the panko breadcrumbs, Parmesan cheese, olive oil, and paprika.

 Layer this on top of the cooked spaghetti noodles and then layer on parmesan cheese on top. 

TO FINISH:
Sprinkle paprika and Parsley over the top and roast in the oven for 10 to 15 minutes.

serve hot with a lemon AFTER the baked has cooled for 5 to 10 minutes.

Optional: can serve with rice or orzo
