January 2025 City Life VLOG: Yoga & Fitness Updates, Hauls, Gluten Free Home Cooked Foods, Date Nights and NYE Vacation Recap

 


Today I learned about a term
called a "glimmer." Which is the
opposite of a trigger. Glimmers
are those moments in your day
that make you feel joy,
happiness, peace, or gratitude.
Once you train your brain to be
on the lookout for glimmers,
these tiny moments will appear
more and more.










The time jump from 2019 to 2025 is crazy work, I have lived three lives.

New Years Dinner
You need something green, you need Black eyed peas and a protien. I did my usual traditional Southern dinner and then my hubs decided he wanted French fries with it so here it is.

TUSCAN CHICKEN



Ingredients


112 pounds boneless skinless chicken breasts
thinly sliced


2 Tablespoons olive oil


1 cup heavy cream


1/2 cup chicken broth


1 teaspoon garlic powder


1 teaspoon italian seasoning


1/2 cup parmesan cheese


1 cup spinach chopped


1/2 cup sun dried tomatoes, drained


Instructions:


In a large skillet add olive oil and cook the
chicken on medium-high heat for 3-5 minutes
on each side (or until browned) and until no
longer pink in the center. Remove the chicken and set it aside.






Add the heavy cream, chicken broth, garlic
powder, Italian seasoning, and parmesan
cheese to the skillet. Whisk over medium-high heat until it starts to thicken,
Add the spinach and sundried tomatoes and let it simmer until the spinach starts to wilt.

Add the chicken back to the pan and serve over pasta if desired.






What I had for lunch today. 

I love these containers of pho that Publix sales. These are obviously not as good as the real pho from a restaurant, but it is tasty and it's quick and easy. I find the vegetable flavor to be pretty good.

Add any ingredients you want.

Trader Joe's Sriracha seasoning: 60g of kosher salt


I avoided using the seasoning packet and oil and used my own as well.

Seasoning mix:

Onion powder
Garlic powder
White pepper
Black pepper
Ginger powder
Dried chives
Trader Joe's Black mushroom powder
A dash of sea salt

Chilli Olive Oil by Brightland
A dash of roasted sesame oil


I made this one kind a basic, but I like to add these vegetables:

Bean sprouts
basil
white mushrooms or shitake
white onion slices
lime Wedge
Jalapeño or Serrano peppers









A lot of this month I cooked a lot of simple dinners which consist of a protein  and a veggie, sometimes I don't even bother with rice. For me, January is a month where my focus and goal is on getting my body back on my normal stable clean diet after holiday and vacation eating from November 27th to New Years.


I was pretty lazy with the photos, but this is blaCKened salmon with lemon, broccoli and jasmine rice. I cooked rhe salmon in my BPA free air fryer and the blackening seasoning is by Old Bay.
